Roasted Sweet Potato with Maple and Cranberry

 Adapted from Branford Public School Food Services

  • 12 Lbs sweet potato, peeled and diced

  • 3 cups dried cranberry - soaked in hot water then drained

  • 1 cup maple syrup

  • 3 tbs salt

Combine all ingredients and toss well to coat. Roast at 375-400 for 25-35 minutes, stirring midway. 

1 Lb. of sweet potato makes approx. 1.5 cups peeled, diced raw sweet potato.

This recipe makes approx. 250-350 2oz. taste tests.

Winter recipes from the Mohegan Tradition

While these may have been made before the Sugar Moon rose, they reflect the rich winter storage food available in winter. Wild boar and pig was introduced to the Americas in thew 1500’s so prior to that the stew may have been made with deer or goose and other wild game hunted in the winter.
